*Almond Milk (organic is best, less additives) x 1.5 cups
*Quick oats x 1/2 cup
*Apple x 1, grated
*Coconut (dessicated) x 2 tablespoons
*Chia seeds (any colour) x 1 tablespoon
*Raw unsalted nuts x 1 tablespoon and extra for serving (eg walnuts, pistachios, cashews or pecans)
*Cinnamon, ground x 1/2 teaspoon
*1 large jar with lid

-Put grated apple in jar. Add remaining ingredients, oats, coconut, chia, cinnamon and nuts.
-Top with a cup of almond milk, give it a stir with a spoon or chopstick.
-Add remaining almond milk, put lid on jar, give it a good shake.
-Refrigerate overnight.
-Next day, serve ‘Breakfast in a Jar’ in a bowl with optional extra nuts over the top and some fruit (eg. sliced apple)
If you like you can sweeten it with some organic maple syrup or some raw sugar. Consume within 3 days. This recipe is dairy free, but you can use any kind of milk.
