*Seedless Watermelon x 1/4
*Full cream feta x 100 grams (about half a block from deli)
*Fresh mint leaves x 7
-Chop watermelon into cubes (about 3cm) & put into a serving bowl.
-Roll up mint leaves and snip with scissors. Scatter over salad, leaving some aside to garnish the top of the salad later. Lightly mix through.
-Crumble over feta (you might need a knife to chop the feta up). Scatter over remaining mint. Serve.
