*Dried pasta (of your choice, eg. fettuccine) x 350gm
*Reserved pasta water x 1/2 cup (pour this off after your pasta has finished boiling)
*Onion x 1, finely chopped
*Garlic x 2 garlic cloves, minced
*Tomato paste x 2 tablespoons
*Dry White Wine x 1/2 cup
*Chicken stock powder x 1 teaspoon
*Ripe, fresh tomatoes x 3, chopped
*Mixed seafood (from deli) x 400gm
*Flat leaf parsley x 1/2 cup, chopped (leave some for garnish at the end)
*Parmesan, grated x 1/3 cup (+ extra for topping to finish dish)
*Lemon wedges to serve
*Salt and pepper to taste
*Butter x 2 teaspoons to stir through pasta at the end

-Cook pasta according to packet instructions until el dente. When pouring off water, reserve half a cup of the pasta water which will be need for the sauce.
-In a large frying pan, saute onion until soft, then add garlic and fry a minute.
-Add tomato paste, stir and fry for a couple of minutes, stirring.
-Add wine and chicken stock powder and simmer until reduced by half.
-Increase heat, add fresh tomato and cook a couple of minutes until softened.
-Add seafood and cook 3 or 4 minutes or until just cooked through.
-Add cooked pasta, parsley and parmesan cheese, stir well. Add reserved pasta water and stir again, making sure pasta is heated through.
-Add butter, stir (taste) then season with salt, if needed and add pepper.
-Serve in bowls with a lemon wedge, top with extra parmesan cheese and parsley.
