Apple Pikelets
Makes about 8 large pikelets
*Self Raising Flour x 3/4 cup
*Sugar x 3 tablespoon’s
*Cinnamon x 1/2 teaspoon
*Salt x 1 pinch
*Baking Powder x 1 pinch
*Egg x 1 large
*Granny Smith apples x 2 (peeled, grated)
*Melted butter x 1 tablespoon
*Thickened cream x 1/2 cup
*Oil for frying
*Icing sugar for dusting

-Mix dry ingredients in a bowl (flour, sugar, cinnamon, salt and baking powder).
-Mix wet ingredients in a separate bowl (grated apples, cream, melted butter and cream)
-Combine wet and dry ingredients. Mixture should look like thick muffin batter.
-In a medium-hot, oiled pan drop heaped tablespoon’s of mixture into a pan, to form mini-pancakes. The recipe yields about 8 large pikelets. Usually 4 can be made at a time. Fry until golden brown on each side, then serve while warm, dusted with icing sugar.
